Step 4: Refrigerate for 24-48 hours. Step 5: Fill a large pot with enough water such that the ham maker will fit in it and the water will be higher than the meat level inside the ham maker. Step 6: Cook until the thermometer in the meat reads 77℃ (170℉). This will take about 1.5-3 hours. Step 7: Remove the ham maker from the pot of water.
